The Nieto G-260 Gaucho Knife is a traditional fixed-blade meat preparation and camp knife manufactured in Albacete, Spain. Styled after South American gaucho cutlery, it features a 260 mm flat-ground blade forged from AN-58 stainless steel, tempered to a hardness of 58 to 60 HRC. Designed primarily for slicing large cuts of meat, outdoor barbecue cooking, and hanging game processing, the knife is fitted with a genuine stag horn handle, an aluminium and stainless steel ferrule, and an encapsulated stick-tang construction. It comes complete with a fitted traditional leather sheath for secure belt carry.

  • AN-58 Stainless Steel: Tempered to 58–60 HRC with a 4 mm spine thickness, providing edge retention and structural rigidity for continuous slicing and carcass breakdown.
  • 26 cm Slicing Geometry: The 260 mm drop-point blade profile facilitates long, single-pass cuts through roasts, steaks, and large game cuts.
  • Natural Stag Horn Handle: Fitted with genuine deer stag horn (*asta de ciervo*) over a hidden stick tang, secured with a stainless steel and aluminium ferrule.
  • Leather Sheath Included: Includes a premium, fitted leather sheath designed for safe transport in camp kitchens and hunting setups.

Who is the Nieto G-260 Gaucho Knife Stag Horn 26cm for?

  • Camp cooks and barbecue enthusiasts — Requires the 260 mm blade length and 4 mm spine thickness of this gaucho knife to execute clean, single-pass carving and portioning across large roasts and briskets.
  • Hunters processing large game — Relies on the 58 to 60 HRC hardness of the AN-58 stainless steel blade and its 380 mm overall length for steady carcass breakdown and hanging meat prep at hunting camps.

Less suitable for: Delicate camp tasks, fine caping, or general everyday carry where a compact fixed blade measuring 9 to 11 cm is required, as well as high-impact batoning, wood splitting, or prying where a heavy full-tang bushcraft knife is better suited than this stick-tang design.
